
Raisin Pound Cake
Description:
This recipe came from Recipes.net. Most cakes that include raisins also call for lots of spices, but this is a moist, lightly-sweet cake with plump juicy raisins as a highlight.
Ingredients:
1 cup unsalted butter, softened
1 cup sugar (I used brown sugar.)
4 large eggs
2 cups all-purpose flour (I used a mix of whole wheat and white.)
½ cup milk
1 tsp lemon extract
1 tsp vanilla extract
1 ½ cups raisins
2 tsp baking powder
1 tsp coarse salt (I don't know why it's supposed to be coarse. I really don't think it made a difference that it was coarse.)
Directions:
Preheat oven to 350 degrees. Grease a tube pan with butter.
Cream the butter and sugar in a mixer. Add the eggs, mixing after each addition. Add dry ingredients, mixing just until incorporated. Add milk, lemon and vanilla extracts. (I forgot to add the lemon when I made the cake and it was still quite tasty.) Fold the raisins into batter.
Pour batter into tube pan and bake for 60 minutes, or at least until toothpick inserted in the center comes out clean. (In our convection oven, I think it cooked in about half that time. Once the top was lightly browned, I checked it with a toothpick and it came out clean.)
