Au Gratin Potatoes

These creamy, cheesy potatoes are pretty easy to make, but you have to get them in the oven about an hour before you want to eat.

Ingredients:

3 T. butter
3 T. flour
2 c. milk
1/2 t. pepper
1 t. salt
1 1/2 c. cheddar cheese, grated
1 c. light beer
1/2 t. dry mustard if you have it
4 potatoes
1 medium onion or half a large onion

Directions:

Preheat the oven to 400 degrees.

In a sauce pan, melt the butter over medium to medium-low heat. Add flour and mix well until a paste is formed. Add milk and mix until paste is thoroughly incorporated into the milk. Add pepper and salt. Simmer, stirring fairly frequently, until sauce thickens. Add grated cheese and beer (and mustard) and stir until cheese is melted.

Pour about 1/2 cup of the cheese mixture into the bottom of your pan to keep the potatoes from sticking. Slice the potatoes to about 1/4 inch thickness or a little skinnier. Layer half of them into the bottom of the pan. Slice the onion and layer it on top of the potatoes, then cover with the rest of the potatoes. Pour the cheese sauce over the potatoes. Cover the pan (with tin foil if the pan does not have its own oven safe lid) and bake for one hour, or until potatoes are soft.
